Fruit Solstice Salad

Ingredients
- Orange -Honey Dressing (see recipe below)
- 1 medium jicama, peeled and cut into 1/4 inch slices
- 3 oranges, peeled and sliced
- 3 kiwi fruit, peeled and sliced
- 1/4 cup pomegranate seeds or dried cranberries
- Prepare Orange-Honey Dressing.
- Cut jicama slices with a star-shaped cookie cutter.
- Mix jicama, oranges and kiwi fruit in a serving bowl. Toss with dressing.
- Sprinkle with pomegranate seeds or dried cranberries.
Orange-Honey Dressing
- 1/4 cup orange juice
- 1/4 cup honey
- 1/2 teaspoon ground cinamon
Shake ingredients in tightly sealed container.

I have never made this. I added this recipe because I wanted a Yuletide recipe with oranges.
I originally wanted to share something my mother always made for guests during the December holidays--Ambrosia.
I actually had thought Ambrosia might be an obscure Florida "winter time" dish.
